Clementines!


-Baked leftover GF spaghetti (Tinkyada) with turkey ham strips and egg

Check out the clementines!! Today the boy decided on his own to try a piece of clementine. He wasn't able to eat any of the pulp, but he loved chewing the juice out. I call that a win! Notice the tiny container that's in with his pith-free clementine sections? I'm hoping that's where the pulp will go instead of being spit into his lunchbox or chipmunked.
The smoothie is a re-creation of one of the kid's favorites that we order at a local vegan restaurant. We haven't been there in quite a while, and the kids have mentioned wanting to try to make this smoothie at home.

UPDATE: The boy was a huge fan of this lunch, especially the eggy baked noodles. The girl really liked the smoothie, but wasn't into the baked noodles (though I'm not sure she tasted them).
All clementines were eaten!

Tomato Angst and Silis


Today was a day off for the kids, so I didn't pack lunches. Instead, we spent some time at the skate park with the balance bikes, then came home with two cranky kids who were feeling snacky-but-don't-want-anything-you-offer-y. The mister entertained them with a cardboard box while I put together a fanciful supper that was sure to turn the moods around (it totally worked!). 

-Way Better Snacks sweet potato chips (they have chia in them!)
-Kangaroo and elephant shaped sandwiches made with Earth Balance Mindful Mayo and Wellshire Turkey Ham
-Grape tomatoes arranged into a flower with an olive center
-Shredded turkey ham left over after using the cookie cutters for the sandwiches
-Scrambled egg (the boy's new "yes list" food!!)
-HealthyPants muffin 

Both kids came running when they heard me put the plates on the table. They immediately sat down and started to eat, but had to stop a few times to come over to hug me and say thanks for the muffin, or the sandwich, or the scrambled egg. You'd think they'd been eating only rice mush and overcooked green beans their whole lives, and were just tasting real food for the first time. The only actual new food was the tomatoes. They are tiny little grape tomatoes, and they are sweet and good. The girl loved them once she tried one, but she has always been a fan of tomatoes. The boy got worried. Furrowed his brows and everything. Here's his "this has touched my plate and contaminated all that is right in the world" face...
The tomato angst only lasted until he spotted the elephant sandwich on his plate. He was able to keep the tomatoes on his plate, though he wasn't able to try one. He did bring a few over to me and asked me to eat them, and wanted to watch me bite them so he could see if they'd squirt.

Eventually, they went to bed, and I got started on lunch...


-Half sandwich of Wellshire turkey canadian bacon and Earth Balance Mindful Mayo (egg and soy free!) on Rudi's gf multigrain bread
-Andean Dream quinoa/coconut cookie
-Peanut butter/cocoa/coconut milk yogurt smoothie
-Bare Fruit cinnamon apple chips will be put into their bags for snack

Our new Sili Squeezes have arrived! The kids have been super excited for these to come, and were thrilled to see them on our doorstep yesterday. I was planning on filling them with an old standby for the first time using them, but on a whim decided to try something new. I've been having such good luck introducing new foods at lunchtime, why not press my luck a little further. Tomorrow is a gym day, so they'll need lots of energy. Plus, by the end of a long day at school, they are hungry. This smoothie should have lots of sticking power, but hopefully not so much that they are too full for gym.
It's a little sweet for my taste, and I'm not a huge fan of the coconut milk yogurt. Hopefully the kids will like it. If not, I'll have an extra snack for them to eat when I pick them up. 

Ingredients (this made enough to fill 2 6oz silis, and a bit more for tasting) :





Honey, 2 tbsp






Dates - Medjool, 4 date, pitted






Cocoa Powder Organic, 1 tbsp (5g)






Flax Seed - Ground , 1 tablespoon






Nutiva Organic Hemp Protein - Organic Shelled Hemp Seed, 3 Tablespoons






Organic Peanut Butter - Smooth, No Salt Added, 2 tablespoons






So Delicious Cultured Coconut Milk - Vanilla - Yogurt, 8 oz






Bananas - Raw, 1 medium














UPDATE: Got a very interesting response to today's lunch. The boy declared this a "no list" lunch, but then went on to discuss (at length) how much he liked the smoothie. What he didn't like was the sandwich. That he ate.
Somehow I went to bed last night like normal, but woke up this morning in some sort of food aversion Twilight Zone where my kid actually eats a food that he doesn't like.
The girl also didn't like her sandwich, but clarified that she just wasn't into the mayo. She pulled off the turkey to eat, and left the bread and mayo.

HealthyPants!


-2 HealthyPants muffins

Juice pouches are such a rarity in this house since we all choose to drink water throughout the day. I was asked to bring some to soccer last week, and we had a few left over that the kids have been asking about all weekend. They'll still bring their water bottles to school with them to drink during the day, and the juice will be a lunch time treat. 
I made a batch of muffins this afternoon. The boy has been asking for banana bread, so I used a Simply Organic gluten free banana bread mix as the base. Then I tossed a bunch of fruit, veggies, nuts and healthy fat in there and ended up with some super tasty muffins that have to be called HealthyPants. The kids approved heartily. Want the recipe?


1 box Simply Organic Banana Bread mix






1 1/2 cups grated organic zucchini






1/2 cup grated organic carrots






1/2 cup organic raisins






1 cup grated organic apple (with skin)






2/3 cup Organic shelled hemp seeds






1/3 cup Organic Chia Seeds






3 large egg, slightly beaten






1 tsp ground cinnamon






2 Tbsp Organic Unsulphered Blackstrap Molasses






2 Tbsp Organic Extra Virgin Coconut Oil






1/2 cup pecan halves






1/3 cup maple syrup 
3/4 cup water

Pour banana bread mix, eggs, and water into a mixing bowl and stir to combine. Add everything else and stir some more. Pour into greased muffin pan (I used coconut oil), and bake 45 minutes, or until toothpick comes out clean. Makes 20 kid-sized muffins. Yes, there are no bananas.

It's a Friday Lunch :)


-Gluten free protein pancakes with hemp seeds and chia
-Sunbutter/peanut butter/honey spread for the pancakes (equal parts peanut and sunbutter, honey to taste)
-Apple/blueberry/carrot pouch for the girl, banana/peach/coconut/plum for the boy
-Organic cranberry fruit strip

Interesting that I've packed something so breakfast-y for lunch just after blogging about wanting to move away from breakfast foods in the morning. It's a product of wanting to use up the last of the frozen pancakes I made last week, not having a list on last week's grocery run (which has caused a pathetic fridge situation), and the kids having trouble falling asleep after a busy day (keeping me upstairs much longer than anticipated).

UPDATE: This went over well. They both like the pancakes and spread, and I love that the boy gets some fine motor practice using the little spreader. Bonus: it seems that he's back to liking the fruit purees!! I'm so glad we didn't loose another food, whew! Now I'm so ready for a weekend of unplanned lunches :)

Thursday with Piggies

Between the sunbutter fingers and the Popcorners crumbs, it will be like tarring & feathering them.


Thursday breakfast;
Piggy faces and circles cut from Wellshire Turkey Ham slice and egg sheet, with Glutino round crackers.We're moving away from breakfast foods like gf waffles, cereals, and yogurt, and trying to serve the kids regular food in the morning. I don't like how devoid of real nutrition breakfast-y foods tend to be. It will likely be a slow transition, since the kids love empty carby waffles, but I think we'll get there. Especially if it's cute.

UPDATE: They both loved breakfast and lunch! The lunchboxes came home mostly empty, with the exception of the girl's apple. She ate a few clementines after school though, so it all worked out.

Ambitious Experiment


My son has an extremely limited diet for multiple reasons. He currently only has about 15 foods on his "yes list". I've been working hard to try to get a few new choices on there, but he looses foods more easily than he gains them, so it's a delicate balance. We don't push him to try new foods, but do expose him to foods daily by putting them on his plate or in his lunches. He will sometimes surprise us by tasting it, and occasionally will like something enough to add it to his list.
Tomorrow's lunch is a big experiment, and I'm not entirely sure that it won't totally backfire. I thought I'd give it a try though, and even if it goes badly, the boy won't starve or hold a grudge for too long (hopefully). I won't be eating with them tomorrow, so I'm especially interested to see how much of this comes back home in the afternoon.

Hard boiled egg, molded into a fish/heart shape. The kids tasted hard boiled eggs a few weeks ago and didn't love them, but didn't gag or spit them out either. I'm hoping the cute shapes will entice a bite or two.
Wellshire turkey maple sausage link, cut into bites. This is one of the boy's favorites. Yes, they are touching the egg and that is risky. I'm hoping he'll be able to overlook the touching since he loves turkey sausage so much.
Tinkyada organic gf spaghetti noodles, with sunbutter/honey/coconut amino sauce. Another longshot. Noodles of any shape are generally a favorite, but sauces of any kind are not looked upon kindly. My hope is that he'll at least taste it, and perhaps the sweetness of the honey will draw him in.
First initial made with daiya cheese shreds baked until slightly crunchy, then cut with cookie cutters. The girl isn't so into the daiya, but she does usually like it when it's made this way.
Gluten-free Caveman Cookie. A brand new food, but the boy chose these at the grocery store, so I don't foresee any issues. Plus, it's a cookie. They've got good ingredients, so even if this is the only thing he eats, he'll be getting some good fats and protein.
Carrot sticks and peanut butter. The boy asked me to pack this in tomorrow's lunch. Carrots are a new like food for him (and his only vegetable), so I'm excited that he's not only willing to eat them, but also asking for them.
Clementine, with the peel partially started. The girl loves clementines and was thrilled to see that we had some. I'm not sure that she'll have time to peel and eat it, but she'll be able to finish it after school if there isn't enough time at lunch.
Peter Rabbit Organics strawberry/banana pouch. To stick with the theme, the kids haven't tried this variety before.
Crossing fingers for a happy experimental Wednesday lunch!

UPDATE: I couldn't have been more surprised. I was so nervous about sending such a risky lunch, but it paid off in the end. New foods were not only tried, they were liked! That happens so rarely around here. The hard boiled eggs were the hit of the day, and I've been asked to pack them often. The cheese initials were a flop, and didn't stay crisp at all. That meant that the girl wouldn't eat her noodles since they were cheesy. He liked the cheese, but didn't realize that it was his initial. He decided not to try the noodles because he didn't like the look of the sauce, but he was able to eat the sausage even though they were touching the egg. They loved the strawberry/banana pouch. They said it tasted like a smoothie and the boy asked me to make our own version of the same thing when the reusable pouches get here. Both clementines came home, his because he won't eat them, hers because she ran out of time. She ate them both after school.

2-for-1 lunches


Monday:
Mini protein pancakes with chia and hemp seeds
Spread made with sunbutter, peanut butter, and maple syrup, plus a small popsicle stick for spreading
Trail mix
Andean Dream coconut/quinoa cookie

Snack: another try at fruit and veggie purees. This time it was a Strawberry/kiwi/beet puree from Happy Tots. The girl liked hers a lot, but I forgot to ask the boy how he liked his. It wasn't in his bag, so hopefully it went into him.

This lunch got a big thumbs up from both kids. The boy asked me to put the pancakes and spread on our "make again" list. Neither one ate all of their lunch, but they were eager to finish up the leftovers for snack.


Tuesday's lunch is making me a little nervous. I haven't packed yogurt yet, and I'm not sure that we won't have a yogurt catastrophe upon opening the containers. I'll just have to hope it works.

So Delicious Coconut Milk Yogurt, Vanilla
1 Tablespoon of Nutiva organic help seeds
A few almonds
Half sunbutter/strawberry jam sandwich on Rudi's GF bread
Container of dried fruit with golden raisins on the bottom layer and cranberries on top
Local honey stick

The plan is to have the kids put the toppings on their yogurt. I'm curious to see how this plays out. They will need help opening the honey stick, but they should be able to figure out the rest on their own.

UPDATE: This was a big win all around. I had to help them quite a bit with the assembly, but once it was put together, it was gone in no time. They both chose to top their yogurt with the hemp seeds and honey, and eat the raisins and cranberries separately. The boy left his almonds, but the girl ate a few of hers. The other kids were pretty curious about the honey sticks.

Sunshine and light, it must be Friday!


Yeah, I know. I posted a raving mess of babble two days ago about the insanity of pizza on Friday, and here I am, packing pizza on Friday. There are reasons. I am being beaten into submission by some kind of inflammatory snot monster that's taken up residence in my sinus cavity (appetizing), the boy took almost 3 hours to fall asleep last night and needed me to hang out with him until he was sleeping, and then he woke in a foul mood that I got the brunt of. In spite of all that, I was an awesome mom at school today (with the exception of a less than stellar few moments way too early in the morning). Most of the awesome points were because the kids found dark chocolate in their lunch boxes, but I also got a little credit for making a bright, sunshiny new bulletin board for their hallway. It was a sad brown cork board before I got a hold of it, and now it's full of sunshine and light.

We eat beige


Apparently Thursday will be beige food day. I didn't notice while packing this up how monochromatic it was. At least there are rainbow napkins.
1/2 sunbutter and strawberry jam on Udi's gf bread

3 squares of organic dark chocolate (in tiny container)

Organic peanut butter bar for snack

We are fighting colds, so I thought I'd give them some dark chocolate to help with throat tickles, and because it's yummy. I'm also going to start doubling up on the vitamin C in the morning. 
Tonight I made a batch of mini pancakes with hemp seeds and chia, and stuck them in the freezer for lunches. I'm thinking about packing them with a dip made with sunbutter and maple syrup, or maybe making little sandwiches with them.

UPDATE: Clean Plate Club! Either I didn't pack enough, or we've get a winning lunch :)

Quick and Easy Wednesday

We didn't get a chance for the kids to pick a snack for tomorrow, so I'm going to choose for them and try to remember to ask if they want to switch it out in the morning.Sleep time now :)

UPDATE: I wasn't able to eat lunch with the kids today, and they said they didn't have enough time to finish their food. Interestingly, they both brought their cookie home and had it for an after school snack. The girl also left some of her bagel, and they both left about 1/3 of their trail mix. Since this was a smaller lunch than usual, I'm wondering if the cold we've been fighting is affecting their appetite.

If it's Tuesday, let's have pizza!


When I was in high school, there were two theater kids who used to give the morning announcement every day. That they were theater kids is important, because to get the full effect of the story, you'll have to hear them being theater-y in your head. So, every Friday morning at the end of announcements, their exuberant, youthful voices crashed into every corner of the school; "If it's Friday, It Must be Pizza Day!". Only now I'm hearing it in more of an Effie Trinket voice, which isn't helping the image at all.
So, now we are eating pizza on Tuesday. But not every Tuesday, that wouldn't work around here.
The girl won't eat cheese, so I thought I'd try a plain red sauce pizza for her, cut it into strips, and then make a dipping sauce. I tossed some raw cashews, nutritional yeast, hemp seeds, raw garlic, and salt into the Vitamix with a little water, and mashed it up until it was creamy. She was wary at first, but then said she loved it. The boy got pizza strips with red sauce and daiya cheese, and wouldn't even look at the dipping sauce, but he did like the pizza strips. I also rolled up a single piece of Wellshire turkey ham in a small square of waxed paper so that they'd have some protein if they weren't into the dipping sauce. The boy once again ignored the pouch, even though it was his favorite one, apple/squash. I'll have to give them a rest for a while and see if I can come up with another way to get veggies into him. I was a bad reusable mama and used ziplock baggies for the (so yummy!) dehydrated cinnamon apples. I couldn't figure out another way to fit them into that narrow space in the lunchbox without having them get all hydrated and funny. I guess I'll have to trade in some hippie points for that one.

A New Monday


A new week of lunches, and this time I'm a bit more prepared. I have 5 (sunbutter and strawberry jam on Rudi's gf bread) sandwiches made, halved, and in the freezer, and have mixed up a new jar of organic trail mix for the week.That should cut out some prep time in the evening.
We found some ground cherries at the farmer's market over the weekend, and the girl is quite excited to have them in her lunch tomorrow. I'm guessing that the boy will leave his, but gave him a few anyway. The kids chose an organic fruit & nut bar for snack, but when they saw that there was a new batch of trail mix, asked to put the bar in their lunch so that they could have the trail mix for snack instead. There is also a coconut/quinoa cookie in there, and a HappyTot banana/peach/coconut/plum pouch.

UPDATE: It wasn't a surprise that the ground cherries got left by the boy, but the girl also ignored hers, even though she was the one who asked for them. She also left the peanuts from her trail mix. Strange kids. The boy has decided that he's done with pouches for a while. Darn.

Friday with octopi


I'll be so excited to get back onto a mac so that I can post pictures properly. Please don't strain your neck, but the little octopi are so cute!
Friday's lunch got a little fancy, with some fun surprises...
Happy Tots pouch (mango, kale, apple)
Cheesy rice (sushi rice with daiya cheddar melted in) with a half of a Bell & Evans organic turkey dog octopus (the face is made with pieces that I cut out of a sheet of nori)
Half of a sunbutter and strawberry jam sandwich on Rudi's gf multigrain bread
Tiny container with 5 organic gummy bears

Snack is trail mix with peanuts, apricots, dried mango strips, and raisins

The girl isn't too fond of the daiya cheese, but I needed something to help hold the leftover rice together. Usually I make rice balls with just made rice, and it holds together great without any help. I don't know if they would freeze or defrost well, but I may experiment with making a few extra next time to see.

UPDATE: The boy dropped his rice star on the floor, but it worked out fine since the girl wouldn't touch hers and happily gave it to him. The octopi were a huge hit, and everyone at the table thought they were pretty cool. Sunbutter and jelly is going strong and being requested frequently. The boy said the mango/kale/apple sauce pouch was yuck, and doesn't want that kind anymore. The girl liked hers.

NO co-mingling of food permitted


Excuse the grumblings, I thought the pic would be right this time, but it rotated itself (grummel, grummel).
Tomorrow's lunch is a bit of an experiment. This is another Systema box, but this one has no divider, which opens up the options somewhat on the inner containers. Inner containers are very serious business when you have a child with a "no co-mingling of food permitted unless under very specific circumstances which can and will change with absolutely no warning" rule.

Tomorrow's menu:
Peter Rabbit organic apple/butternut squash puree pouch
Raw cauliflower & broccoli (maybe I'll be surprised)
Glutino gf crackers
Wellshire Turkey ham cut into circles
Single Andean Dream quinoa/coconut cookie

Snack:
Home made rainbow trail mix with golden raisins, dried cranberries, dried blueberries, dehydrated mandarin oranges, dried apricots, peanuts (in round containers at top).

The kids seem to be enjoying having the little flannel napkins tucked into their lunch. At home, they like to have a small towel on the table in case of spills, and I think the napkin is an adequate stand-in.

UPDATE: As expected, the broccoli and cauliflower went untouched. I'll keep trying. The crackers and turkey circles were a big hit, and the boy asked me to pack them again. He also said that he didn't like the orange pieces or the blueberries in the trail mix, and he didn't eat them. The girl also didn't like the orange pieces, but said that they weren't too yucky to eat. :)

So, I figured out how to get last night's photo up, but I can't edit it :(. I guess I'm a creature of habit, so used to the way my computer is (was) set up that I feel totally computer illiterate on a pc. Today was a bit different at lunch time since it was pouring when they walked down for recess, and they ended up staying inside. All that extra energy made for an interesting, wiggly lunch. At least it was a gym day, so they got all those wiggles out eventually.
The girl went straight for her pouch first, then tried (and loved) the date roll, then moved on to carrots and pb. She nibbled the bagel, but ran out of time so she saved it for her snack. The boy dove into the date roll first (more thumbs up), then spent so much time on the carrots and pb that he forgot about the pouch. He also only took a bite or two of bagel, then saved it and the pouch for a snack.
At snack time, he only had half of the pouch, then pawned it off onto the girl, who gladly helped him finish it. He couldn't tell me what he didn't like about it, but didn't seem offended by it, so I won't pull the remaining one of that flavor out of the snack drawer.

Difficult

My computer was stolen at the end of last week, so blog posts will be on hold for a bit. I'm still taking photos, and hopefully will be able to resume blogging our allergy-friendly lunchboxes soon.
